The Breeds Behind the Dairy Breed Beef
Dairy cattle haven’t always been celebrated for their beef. We’re changing that. By focusing on genetics, pasture and time, our dairy breeds deliver exceptional eating quality.
The Breeds
Jersey
Dairy cattle with naturally high butterfat potential produce beef that develops rich yellow fat and excellent marbling. This distinctive yellow fat, a hallmark of traditional grass-fed genetics, melts at a lower temperature to deliver a deeper, more succulent flavor profile. The result is flavor-focused meat in compact, high-performing cuts that suit professional kitchens and specialist butcheries seeking consistency, visual distinction, and unparalleled eating quality.
Guernsey
Known for producing rich golden milk, these same genetic traits carry through into the rich yellow fat, giving the beef its distinctive color and depth of flavor. Their gentle temperament supports low-stress handling, which further enhances tenderness and texture, while a balanced carcass size delivers reliable eating quality without excess. This natural concentration of yellow fat and marbling ensures a high-performing product that stands out for its visual appeal and premium culinary performance.
Holstein
Their dairy cattle contribute added yield and carcass length, and when raised on pasture and finished correctly, Holsteins deliver generous primal sizes characterized by a robust beefy flavor. This deep, savory profile is complemented by a generous, rich off-white/cream fat layer that serves as a natural indicator of their pasture-raised diet. The result is a high-yielding carcass that provides both visual distinction and a consistent, high-quality eating experience across its larger primal cuts.
Jersey x Angus
When pasture-raised and properly finished, these Dairy Jersey × Angus crosses deliver well-proportioned primals characterized by rich yellow fat and intense marbling. This distinctive yellow fat is a direct result of their unique genetics, producing beef that stands out for its vibrant color and deep, buttery flavor. The result is a highly versatile carcass that maintains excellent tenderness and consistent eating quality, perfectly bridging the gap between high yield and premium visual distinction.
