Pasture-raised. Ethically farmed. Chef-ready.
Naturally Golden, Distinctly Different
Pasture-raised dairy breeds, finished on our proprietary natural feeding regime to produce rich, yellow fat and exceptional flavour.
Traceable
Every carcass can be traced back to our farm, feeding regime and pastures.
Ethical
Cattle grow naturally on pasture with no hormones or growth promoters.
Flavourful
Pasture grazing and careful finishing deliver rich, buttery, tender beef.
WHAT MAKES LUIGI’S DIFFERENT?
Why Yellow Fat Beef?
Yellow-fat beef delivers a deeper, more authentic beef flavour and a superior eating experience. The naturally pasture-raised diet produces a softer, golden fat that melts beautifully during cooking, enhancing juiciness and carrying flavour through the meat without overpowering it.
- Deeper, buttery flavour
- Luxurious mouthfeel
- Beautiful caramelisation in the pan or on the grill
OUR BREEDS
Dairy Breeds, Re-Imagined for Beef
We specialise in Jersey, Guernsey and Holstein cattle, such as dairy breeds traditionally valued for milk, not meat. With the right genetics, grazing and finishing, these animals produce beautifully marbled beef with gentle, complex flavour and that unmistakable golden fat.
“We don’t chase the fastest growth. We chase flavour, animal welfare and consistency.”
Jersey
Dairy, slow-growing cattle with naturally high butterfat potential and rich yellow fat.
Guernsey
Dairy, slower-maturing cattle with naturally high butterfat and rich yellow fat.
Holstein
Dairy cattle that add yield and structure, balancing carcass size with eating quality.
Jersey x Angus
Carefully selected Jersey x Angus crosses combine the best of each: tenderness, marbling and consistent carcass performance.
PASTURE-BASED, NATURAL FEEDING
Pasture First Science-Driven Finishing
Our cattle spend their lives on lush, irrigated pastures, grazing a mix of carefully selected grasses and legumes. We believe that time on grass – not just feedlot speed – is what creates true flavour.
We’ve developed a proprietary natural feeding regime that:
Starts with multi-species pastures: a mix of grasses and legumes to provide a balance of energy, fibre and natural minerals.
Incorporates lucerne (alfalfa) to support rumen health and steady weight gain.
Adds a grain-free or low-grain finishing phase (customisable per market) to deepen flavour while respecting the natural biology of the animal.
Uses no routine antibiotics, no growth hormones, no broth promoters – only targeted veterinary care when genuinely needed.
The result is a calm, healthy animal that converts pasture and natural feed into tender beef with rich yellow fat – without the shortcuts.
Our Principles
Animal wellbeing and respect
Natural nutrition over chemical shortcuts
Pasture and water stewardship for long-term sustainability

From Our Pastures to Your Plate
Our cattle are raised on select farms in the Prince Albert region, an area known for its unique microclimate, clean underground water and year-round pasture potential. Pure water aquifers feed our irrigation systems, keeping pastures green even when surrounding areas are dry. The mild climate allows our animals to remain on pasture, never confined. Careful rotational grazing protects soil health and plant diversity, ensuring the long-term wellbeing of the land. Every Luigi’s carcass is fully traceable to our farms and feeding regime. When you serve Luigi’s you are serving a specific place and philosophy, not a commodity.
